PRODUCT DESCRIPTION

Hulless waxy barley is a relatively new variety and has a loose outer hull that is thrashed off during harvesting, producing a light colored grain. Due to the loose hull, hulless waxy barley requires minimal processing or cleaning and retains most of the bran germ and endosperm. With a mild, nutty flavor, it can be used as a great secondary flour and should be added with other strong gluten content flours to provide a soft texture when baking cookies, muffins, and quickbreads. Hulless waxy barley is a good source of protein, dietary fibers, thiamin, magnesium and manganese.
