PRODUCT DESCRIPTION

Longer and more slender than wheat in appearance with a grayish green color, rye flours come in light, medium, and dark varieties and work best in bread baking when combined with other strong gluten content flours as rye typically has a delicate gluten structure. With a deep hearty rye flavor to light rye flavor depending on grind and recipe, rye is the key ingredient used to create dark, compact, dense rye bread and pumpernickel. Rye is a good source of dietary fiber, protein, manganese, phosphorous, and selenium.
